The Crockpot Whisper ~ White Chicken Chili



Yes, I have named myself The Crockpot Whisper due to years of coming home to the smell of an amazing dinner waiting to be enjoyed. I'd gently whisper to my amazing crockpot, "Ohhhh what did you make me magic crockpot?" or "Who is my favorite crockpot? That's right, you are."


You might be concerned that I lost my mind which is exactly what my son was positive about as he would yell, "MOM! Stop talking to the crockpot! You did that." That's right son, my enchanted crockpot did the rest.


There is nothing like throwing a bunch of ingredients into the depths of a cauldron, turn it on and abracadabra... dinner is made.


I'll be sharing my favorite recipes with you, please let me know if you try them and join in the joy of whispering to your crockpot.


THE CROCKPOT WHISPER'S WHITE CHICKEN CHILI

  • 1lb chicken breasts (~2 large chicken breasts)

  • 15oz can Northern Beans (drained & rinsed)

  • 15oz can Cannellini Beans (drained & rinsed)

  • 15oz can Butter Beans (drained & rinsed)

  • 4oz can chopped green chiles (feel free to omit or adjust to your tastebuds)

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 1-1/2 teaspoons cumin

  • 1 teaspoon salt

  • 1/4 teaspoon pepper

  • 1 teaspoon dried oregano

  • 1 bay leaf

  • 2 cups chicken broth

  • Juice of 1/2 small lime

  • 1/4 cup milk, any kind

  • 2 Tablespoons flour (gluten free all-purpose if you need it!)

TOP IT OFF: Tabasco sauce, verde sauce, lime wedges, tortilla chips, shredded cheese, chopped cilantro, sour cream, avocado and/or fresh bread.


DIRECTIONS:

  • Add all of the ingredients, saving the flour or GF flour to the end. Stir to combine. Cover and cook on LOW for 6 hours. (or until chicken shreds easily.)

  • (if you'd like, here is an opportunity for you to whisper to your crockpot. Go ahead, I'm not going to judge you.)

  • Remove chicken and shred it, place shredded chicken back into crockpot.

  • Mix/whisk two tablespoons of flour or GF flour with 2 tablespoons of broth from chili. Drizzle and stir into chili so it's well combined. Cover and turn your crockpot up to HIGH for 30 minutes. Let chili thicken.

  • Serve with as many or as little toppings as you'd like!
